My 50th Post --Prawn Gravy / Eral Peyratal

Hi friends,
After a long time iam back with my draft post ....very glad & happy to spend time with my Blog ...I came to india for some reasons ,one main reason is my sister's babyshower & delivery...I want all ur prayers ,blessings , love for her...I terribly miss u guys & all lovable ,caring comments from all of u .....whenever i get time i will publish my post ....Always want all ur encouraging comments & support

Ingredients:
  1. Prawn - 1 lb
  2. Onion(finely choped) - 1 cup
  3. Tomato (big no) - 1 1/2no
  4. RedChilliPowder - 2 tsp
  5. CorianderPowder - 1 tsp
  6. TurmericPowder - 1/4 tsp
  7. GreenChilli - 2 nos
  8. Ginger GarlicPaste - 1/2 tsp
  9. Curry Leaves - 5 to 6 no
  10. Coriander Leaves - 1 stk
  11. Salt To Taste
  12. Oil - 1 tsp
  13. Water - 1/2 cup
Method:
Wash & clean the prawn ,marinate with litte bit of salt & turmeric powder for 5 to 10 mins.Heat oil in a skillet/kadai ,add ginger garlic paste fry for 1 min ,then add the finely chopped onions,curry leaves, 1/2 stk of coriander leaves & fry until onions turn golden brown .Now add the chopped tomatoes & mix well with the onions ,add red chilli powder,coriander powder, turmeric powder & mix all well together ,stir well ,leave the gravy for 5 to 6 mins till it gives out oil on sides . Now add the prawns & mix well with the gravy .,add salt & cook for about 8 to 10 mins in low flame . Don't cook prawn more than 15 mins.Garnish it with coriander leaves.Serve it with rice,paratha....

Hai friends ,coming thursday iam going to India for some personal reasons ...My hubby having work so iam going ....In one mind i decided to go alone but now iam feeling very bad for leaving him alone here .....how he will manage , wht he is going to eat ....all these stuffs getting in my mind & thinking a lot ....Anyway wht to do i have to go for some personal reasons......So only nowadays my posting got slow...Because iam busy with my shopping ,cleaning ,packing etc...so iam hardly getting to post my entries ....soo many r waiting in drafts ....soon i will post them from India... Shrimp & Mealmaker Biryani / Eral,Mealmaker Biryani

Ingredients:

  1. Shrimp/Eral - 8 to 10 nos
  2. Onion(medium) - 1 no
  3. Basmathi Rice - 1 cup
  4. FennelSeeds/Sombu - 1/4 tsp
  5. Tomato - 1 no
  6. Mint Leaves - 5 to 6 stks
  7. Mealmakers - 12 to 15 nos
  8. Bay Leaves - 3 nos
  9. Cloves - 3 nos
  10. Cardamon - 2 nos
  11. Cinnamon - 3 nos
  12. Ginger Garlic Paste - 1/2 tsp
  13. Turmeric Powder - 1/4 tsp
  14. Red Chilli Powder - 1/2 tsp
  15. Green Chillies - 3 to 4 nos
  16. Coriander Leaves - 4 stks
  17. Oil
  18. Salt to Taste
  19. Water - 1 1/2 cup(if want add extra 1/2 cup)
Method:
Wash & clean the shrimp & set aside.Wash & soak the basmathi rice for about 25 to 30 mins.Heat oil in skillet ,add bayleaves, cloves ,cardamon,cinnamon,fennel seeds/sombu & let them fry for a minute.
Add green chillies, ginger garlic paste & fry for a while ,then add the finely chopped onions, half of the mint leaves & coriander leaves & saute for while until the onions turn translucent .Now add the chopped tomatoes & stir all together well , after 5 mins add the red chili powder ,turmeric powder & saute it well for about 6 to 7 mins.
In the mean time ,soak the mealmaker for about 10 to 15 mins in hot water & then squeeze the water from the meal maker by pressing it with your hand. Now add the shrimp & mealmaker pieces & sprinkle some water & cook for about 5 to 6 mins in medium flame .Now add 1 1/2 cups of water to the shrimp , meal maker gravy /mixture & allow it boil .
While the water is boiling add the soaked rice , extra mint leaves & coriander leaves ,salt & stir well all together (check for salt & spicy ) Transfer this whole mixture to a bowl (which fits into ur pressure cooker ) & keep it inside the pressure cooker & leave it for 3 whistles & 5 mins simmer. Garnish it with coriander leaves & serve it hot with raitha...

Pomfret Fish Gravy / Meen kuzhambu

Ingredients:

  1. Pomfret Fish - 1 no
  2. Onions medium size (finely chopped) - 1 no
  3. Tomato (small) - 1 no
  4. Tamarind Juice - 2 to 3 tbsp
  5. Fenugreek Seeds - 1/4 tsp
  6. Fennel Seeds/sombu - 1/4 tsp
  7. Curry Leaves - 5 to 6 nos
  8. Turmeric Powder - 1/2 tsp
  9. Red Chilli Powder - 1 tsp
  10. Coriander Powder - 2 to 3 tsp
  11. Sesame Oil - 2 to 3 tbsp
  12. Salt to Taste

Method:

Wash the fish with turmeric and salt ,set aside. Heat Sesame oil(u can add any oil,but this gives extra flavour) in a skillet/kadai & fry fenugreek seeds, fennel seeds/sombu ,fry for 1 min.Now add onions,curry leaves,fry until the onions turn golden brown . When it turns golden brown,add vertically sliced tomato,turmeric powder & saute for a while . Then add the red chilli powder ,coriander powder & saute well until the raw smell goes & gives out oil on sides .Then add tamarind juice ,salt,required amount of water. Bring it to a boil ,check for the salt & spicy.Now add the fish to the boiling gravy ,close the skillet/kadai with a lid & cook for about 8 to 10 mins in a medium flame (don't keep in high flame).Cook the gravy/kolumbu to desired consistency .Do not over-cook and break the fish. Serve it with hot rice .......

Veg Pulao

Ingredients:

  • Basmathi Rice -- 1 cup

  • Onion -- 1 no

  • Carrot -- 1 no

  • Cauliflower -- 3/4 cup

  • Green Chillies -- 2 nos

  • Potato -- 1/2 no

  • Egg -- 1 no

  • Beans -- 5 to 6 no

  • Peas -- 1/2 cup

  • Ginger garlic Paste -- 1/2 tsp

  • Bayleaves -- 2 nos

  • Cinnamon -- 2 nos

  • Cloves -- 2 to 3 nos

  • Cardamon -- 2 nos

  • Ghee -- 2 tsp

  • Coriander Leaves -- 1 tsk

  • Oil -- 2 to 3 tsp

  • Salt to Taste
Method:
Wash & soak basmathi rice for about 20 to 30 mins. Heat equal amount of ghee & oil in a Skillet/pan , add baylaeaves , cloves, cardamon, cinnamon & ginger garlic paste & fry for 2 mins . Then add the thinly sliced onions ,saute until the onions turn tender .Then add the green chilles , 1/2 stk of coriander leaves & saute for 2 mins ,now add all the vegetables & cook until the vegeies turn tender ,add salt & sprinkle some water & cook for 5 mins .

Take another skillet /kadai ,to that add little oil & scramble the egg with little salt & add to the above vegies mixture & mix all together. Drain the water from the soaked rice & allow the water to boil in microwave for abot 6 mins .In the mean time add the soaked rice to the pan & stir all together & close with the lid for about 5 mins .Now add the hot water to this & mix all together well & check for the salt & close the pan with a lid for about 10 to 15 mins in a low flame .Cover & cook till the rice is done .

There is another easy method --We can do this in a pressure cooker also , for that heat the pressure cooker with litter water inside & then transfer the rice vegie mixture/gravy to a bowl (which fits inside ur cooker ) & keep inside the cooker & leave it for 2 whistles & 5 mins in simmer. Garnish it with roasted cashews ,raisins & coriander leaves....Serve hot with any spicy gravy , fry ,raitha.....

Note: Egg is optional .If u don't like it ,no need to add egg .......but give a try with egg it will surely give a extra taste ......

Egg Gravy/Muttai Kuzhambu

Ingredients:

  1. Egg - 4 nos
  2. Onion(finely chopped) - 1 no (small)
  3. Tomato - 3/4 no
  4. Tamarind - Gooseberry size
  5. Turmeric Powder - 1 pinch
  6. Red Chilli Powder - 1 tsp (depends on ur spicy level)
  7. Coriander Powder - 1/2 tsp
  8. Curry Leaves - 5 nos
  9. FennelSeeds/Sombu - 1/4 tsp
  10. GingerGarlic Paste - 1/8 tsp
  11. Oil - 2 to 3 tsp
  12. Salt to Taste
  13. Coriander Leaves - 1 stks
Method:
Heat oil in a skillet /kadai , add fennel seeds/sombu ,gingergarlic paste & fry for 2 mins. Add chopped onions, curry leaves & saute until it turns golden brown ,then add the chopped tomatoes & cook until soft .Now add red chilli powder, coriander powder , turmeric powder ,salt & fry till the raw smell goes & oil comes on sides . Now add the tamarind pulp & required amount of water & allow it to boil . While its boiling , break the eggs one by one & drop into the gravy /Kolambu , don't stir or mix immediately .Keep it in simmer & close the skillet/kadai with a lid & allow it to boil for 8 to 10 mins until the eggs are cooked well . Once the eggs are cooked ,garnish it with coriander leaves .Serve it with hot rice .........

Strawberry Milkshake

Sending this to Sanghi " FIL - MILK " Event

This is my favourite milkshake......
Ingredients:

  1. Strawberries (sliced) - 4 to 5 nos

  2. Milk - 1 cup

  3. Sugar - 1 tbsp

  4. Ice cubes - 2 to 3

  5. Vanilla Essence - 1/4 tsp
Method:

Grind strawberries, sugar,ice cubes, milk ,vanilla essence ,blend until smooth . Check for the sugar & if want u can add extra sweetness. Pour this into the glass & garnish the rim of the glass with whole strawberry .If want u can scoop ice cream on top ... Serve it chill.......

Pal Kozhukattai


One of my Mom's special ...... love to eat this,when she makes....
Ingredients:

  1. Rice Flour - 2 cups

  2. Coconut Milk - 1 cup

  3. Sugar - 1 to 1 1/2 cup

  4. Cardamon powder - 1/4 tsp

  5. Coconut Grated - 2 tsp

  6. Salt to Taste

  7. Water
Method:

Boil 1 to 1 1/2 cup of water in pan .Take the flour , grated coconut flakes & salt in seperate bowl ,stir the flour with a spatula or spoon by adding the hot water (add the water little by little) until it comes a dough consistency . After its slightly cooled ,rub oil in ur hand & knead it to a soft dough (like chapathi dough consistency). Shape them to small balls ( u can make to ur own sizes) & keep it ready ( this takes time to shape , so sit & do). In a pan first boil some amount of water & then put the small balls 1 by one in the boiling water ( put in small batches it will be easy , do not put all the balls at once).Keep 4 to 5 small balls seperately ( will use at last) . While its boiling ,the balls will float on top , at this stage add the 1/2 cup coconut milk , sugar ,cardamon powder & keep it in low flame with a stirring.
Now mix the 4 to 5 balls ( which we kept seperately) in water ,make it to a liquid paste like & keep it ready . Now to the boiling balls, after 5 mins add the another 1/2 cup of coconut milk & the liquid paste(which we kept ready ,this gives a thick consistency ) , allow it it boil till the kozhukattai's are cooked well , keep it in a low flame. Cook for about 8 to 10 mins in low flame by stirring occasionally . Remove from fire & serve it in room teperature. Store it in fridge & can be served chilled.....

Note :We can make this fully in coconut milk without adding water ..........

Coconut Chutney

Ingredients:
  • Coconut ( shredded) - 1 cup
  • Pottukadalai /split gram(dalia) - 1 tbsp
  • Green Chillies - 2 to 3 nos(depends on ur spicy)
  • Ginger - 1 pinch
  • Garlic (small) - 1/2 no
  • Tamarind - 2 pinch

For Thalipu:

  • Curry Leaves - 5 to 6 ns
  • Mustard seeds - 1tsp
  • Urad Dal - 1/2 tsp
  • Dry Red Chillies - 1 no
  • Oil - 1 tbsp
  • Salt To Taste
Method:
Grind the shredded coconut , pottukadalai/split gram , green chillies, garlic, ginger, tamarind ,salt to a fine paste by adding little amount of water to it .Transfer this paste to a small serving bowl & adjust the consistency by adding required amount of water .Keep a kadai ,add oil to it & leave it for 2 to 3 mins till the oil comes hot enough.Add mustard seeds ,allow it to splutter & then add urad dal ,dry red chillies ,curry leaves & fry till the urad dal turns golden brown in color. Now pour this thalipu to the chutney paste (which we kept in a serving bowl)& check for salt ........Serve it with idly ,dosa ,vada,venpongal,.......

Masala Vadai

Ingredients:
  1. Split Bengal Gram/Channa dal /Kadalai paarupu - 1 cup
  2. Dry Red Chillies - 3 to 4nos
  3. Fennel Seeds /Sombu - 1 tsp
  4. Garlic - 2 nos
  5. Ginger - 1/4 inch
  6. Onions ( finely chopped) - 1/2 cup
  7. Curry leaves - 5 to 6 nos
  8. Coriander Leaves - 2 stks
  9. Salt to Taste
  10. Oil for frying

Method:

Soak the Channa dal /kadalai parupu for about 5 to 6 hours . Take 1 tbsp of soaked dal & keep it aside .Now grind the rest of the dal along with Fennel seeds, garlic ,ginger, dry red chillies coarsely (without adding water). To this coarsely grinded paste add chopped onions , curry leaves , coriander leaves ,salt & 1 tbsp of soaked dal & mix all well together with hand .Heat oil for deep frying & make pattie shaped rounds ( like vada shape)with ur moist palm & drop carefully into the hot oil ( while dropping be careful with the hot oil ). First cook one side & then turn & cook the otherside till golden brown ( do not turn the pattie /vada as soon as u dropped into oil , it will break ) . Serve hot with ketchup , coconut chutney ..... yummy & crispy masala vada's ,my hubby's favourite.........
